Flavour Profile: Sharp, pungent, and slightly citrus; strong bite and crunch in fresh stage, dries well for powder. Excellent for Southeast Asian stir-fries, salsas, and dried spice.
Origin: Vietnam (Southeast Asia), brought to Minnesota in the 1980s by Vietnamese immigrants. Named after the revolutionary leader Ho Chi Minh.
Species: Capsicum Annuum.
Plant Description: Shiny, elongated cayenne-type pods, 4–6in long, slender, smooth, ripen green to bright yellow to orange-yellow then eventually red. Compact plants (18–36in), highly productive, recommended for fresh, dried, or powder use.
