Flavour Profile: Sweet initial taste followed by a latent, raging burn. Fruity, slightly smoky; “poison chili” heat that builds rapidly and lingers. Used for extreme heat, powders, and sauces.
Origin: Assam region, Northeast India; also called Bhut Jolokia or Ghost Pepper.
Species: Capsicum Chinense (with frutescens DNA introgression).
Plant Description: Pods taper, 2–3.5in long, red or bright orange when ripe; thin, wrinkled skin, prune-like grooves. Compact bush, very heat tolerant; often perennial in frost-free areas.
