Flavour Profile: Bright, citrusy, with notes of passionfruit, mango, and apricot; fruity sweetness followed by a clean, lingering burn and hints of raisin aroma.
Origin: Peru; cornerstone of Peruvian cuisine (alongside garlic and red onion), often called Peruvian Yellow Chili.
Species: Capsicum baccatum.
Plant Description: Grows 4–5ft tall, bushy, highly productive; pods are thick-skinned, 4–5in long, maturing from vivid yellow to bright orange. Takes about 4 months to mature, well-suited to warm climates and containers. Each plant can produce ~40 peppers.
Culinary Use: Key in sauces, ceviche, stews (aji de gallina, papa a la huancaína), and marinades; often found as paste, dried, or frozen in Latin groceries.
