Sudan’s farmers grow significant quantities of Capsicum annuum and frutescens, especially long red chilies and bird’s eye–type, much of which is sun‑dried and traded regionally.
Dried chilies are ground into shatta-like pastes and powders for mulah (sauces), stews, and grilled meats. Fresh green chilies are also used in salads and accompaniments. Sudan exports dried chili into neighboring countries but also imports processed sauces.
Flavours lean toward earthy, smoky dried heat used in complex spice mixes.
